An easy, homemade tzatziki. Hands down one of the greatest dips and sauces of all time. It's rich in flavour and full of freshness. I've always got a batch of it on the go in my fridge.
Ingredients:
- 400g soya yoghurt, unsweetened
- 2 garlic cloves, minced
- 1/2 cucumber
- 1/2 lemon, squeezed
- handful fresh mint, chopped
- 1 tbsp chopped dill
- 1 tbsp extra virgin olive oil
- salt, to taste
Directions:

Grate the cucumber and squeeze as much of the juice out of it with your hands.

Add the squeezed cucumber to a bowl with the yoghurt, minced garlic, chopped mint and dill, lemon juice, olive oil and salt. Mix together till combined.

Leave to set in the fridge for up to a day for the best taste.
