Spinach & Cheese Bourekas

Bourekas are a variation of the Turkish pastry staple, Borek. Which if you follow me, you should certainly know of by now. They come in a wide variety of shapes and with all sorts of fillings, but mine are packed full of spinach, tofu and vegan mozzarella for that perfect cheesy consistency.

Ingredients: 

  • 2 bags of fresh spinach
  • 1/2 block of tofu, extra firm
  • 2 white onions
  • 2 spring onions
  • plant-based mozzarella
  • puff pastry (ready made)
  • salt, to taste
  • black pepper
  • melted butter (for brushing)

 Directions: 

  1. In an oiled pan over medium-high heat, cook the chopped onions for about 3 minutes until they are translucent and soft. Then add the spinach into the pan until cook for 1-2 minutes until it has wilted.

  2. Let the mixture cool, then transfer to a bowl and mix with crumbled tofu, chopped spring onions, plus salt and pepper to taste.

  3. Roll out the puff pastry sheet, and slice into six even rectangles. Fill each rectangle with some of the spinach mixture, top with some grated mozzarella and then fold over into triangles. Crimp the edges of your pastry to stop any of the filling leaking out.

  4. Brush your Bourekas with melted butter. Cook in the oven at 190C for 30-40 minutes until they are golden brown and crispy.
