If you didn't know already, ajvar is a lovely, roasted red pepper spread and this is by far one of my favourite ways of using it.
This pasta is a regular staple of mine as it feels so easy and effortless to make, but the outcome is truly irresistible.
Ingredients:
- 2 servings of pasta
- 3 vegan sausages
- 2 garlic cloves, finely chopped
- 2 tbsp of white wine
- 4 tbsp ajvar (roasted red pepper spread)
- 2 tbsp vegan cream cheese
- chilli flakes, to taste
- black pepper
- salt, to taste
Serves 2
Directions:

Boil your pasta of choice saving 1/4 cup of pasta water.

Cook the sausages in a pan with some oil, breaking them down as they cook till crumbled.

Once the sausages are nearly cooked, add in finely chopped garlic and a splash of white wine. Then mix in the ajvar, cream cheese, reserved pasta water, chilli flakes, salt, black pepper and a drizzle of garlic + chilli infused oil if you wish.

Transfer the pasta to the pan with the sauce and mix together.
